‘MUSIC CITY’ BOX

… features three spectacular roasters that you will find when roaming the rhythmic streets of Nashville, Tennessee. The country music capital, known for its big stars and music industry, also sports some of the nation’s premiere roasters and cafes. This month, we teamed up with our friends at Honest Coffee Roasters, Steadfast Coffee Roasters and Elixr Coffee Roasters that each have roasteries or cafes sprinkled across the ‘Music City’.

  • From the Roaster:

    Nguvu is produced in Beni, a territory that is often in the news as pockets of conflict and terrorism still exist. This lot was delayed due to armed attacks that led farmers to flee and seek refuge temporarily outside of Beni for weeks. They came back once security was restored and ensured the safe delivery of high-quality coffee. Coffee revenue and income are critical in such conflict and post-conflict zones.

    Paluku Mulisya Jonas has been a coffee grower since 2005. For a long time, he sold his coffee to brokers and smugglers from Uganda at low prices. At the time, there was no alternative to selling coffee. Now that he doesn't sell his coffee at unfair prices to smugglers, he was able to buy more land and expand his coffee business. Mr. Jonas has four children and hopes to see them all go to university.

  • From the Roaster:
    Worka Sakaro Washing Sation is located in the Gedio Zone. The washing station works with over 400 smallholder farmers in the region. These farmers grow their coffee on the steep mountain slopes at approximately 2,000 to 2,200 meters above sea level. The coffee is grown in the shade of Birbira, Corsica Africana, and Ensete Ventricosum trees. The coffee is picked when the cherries are ripe and then dried on raised beds for 18 to 21 days. Once the coffee is dried it is then milled to remove the husks and stored in a local warehouse before being transported for final processing before shipment.

    This lot follows suit with the wave of groups now experimenting with various methods of “anaerobic” processing. It follows all the same steps as a typical naturally processed coffee, except after the coffee is floated, it is placed into special plastic bags, flushed with carbon dioxide and nitrogen gas, and monitored over 3-7 days until fermented adequately (varies based on mucilage content and environmental conditions). Once the cherries reach the desired pH and color, they are removed from the bags and transferred to drying tables to complete the process.

  • From the Roaster:
    From the Odako Village in Ethiopia, this farm is run by the Dakamo family. The name comes from a local tree native to the region.

    The Ethiopia Odako is washed with a yeast fermentation. This lot was an experimental process using yeast fermentation to bring out some fruit notes in the coffee.

    Many small farmers bring their coffees to be processed at a cooperative and blended to make this delicious coffee.
