Houston has become a vibrant hub of coffee culture with its diverse population and proximity to high-quality coffee growing regions. The city has a thriving coffee scene with a growing number of independent cafes and roasters that offer unique blends and single-origin coffees. Houston has become a hub for specialty coffee and a great place to experience the art and science of coffee roasting and we are thrilled to share three of our favorites: Three Keys Coffee, Amaya Coffee and Third Gen Coffee.

From the roaster: Founded in 2019, Three Keys is a craft coffee roastery based out of Houston, TX. The name is inspired by the valves of the trumpet, which has been the instrument of choice for some of the most influential jazz musicians and composers. Similarly, Three Keys Coffee speaks a language that’s sophisticated yet accessible to everyone who’s willing to slow down and share a cup.

Finca Santa Cruz is a coffee farm in Chiapas, Mexico, run by innovative farmer Pepé Arguello, who focuses on specialty coffee production. The farm is located on the Triunfo Biosphere Reserve, where Pepé uses advanced farming practices and seeks collaboration to increase quality and production. The coffee has a complex flavor profile with notes of ripe purple fruit, honey sweetness, and a layered acidity. Pepé's commitment to specialty coffee extends to the local community, where he helps to educate and improve farming practices.

From the roaster: Anchored in Quality. We strive to carry only the finest quality coffee in our inventory and do so by working with respectable and responsible coffee farmers, exporters, and importers. All coffee is roasted in a manner that highlights nuance and brings balance to the sweetness, acidity and depth of flavors. Because we strive to accentuate the complexity of this high quality produce, coffees are roasted from a light to medium roast coloration.

Amaya Coffee's Jose Emilion Lasso roast is a single origin made from varieties grown on the El Pedregero farm in El Tablón, Nariño at an elevation of 1900 MASL. The coffee has a washed processing method and is noted for its flavors of blackberry, Luxardo cherry, and cola.

Third Gen Coffee is a family-owned business rooted in the Reyes family's third-generation coffee farming legacy from Honduras. The company sources primarily from their farm in Honduras but also partners with Copan Trade to utilize direct trade relationships with coffee growers worldwide, prioritizing fair prices for farmers. Marlon and Rachel Reyes, the owners of Third Gen Coffee, share a passion for coffee and connections with others, which they strive to foster through their business.

This is a medium roast Burundi Natural whole bean coffee with flavor notes of ripe strawberry, black cherry, milk chocolate, and tangerine. It is grown in the Kayanza region by smallholder producers with rich volcanic soil and optimal growing conditions. The coffee is processed at the Gakenke Central Washing Station and is one of the most reputable growing regions in Burundi.
